For those interested in all things iPad, I too some time over the break--when not playing Angry Birds--to investigate photo metadata entry and preservation on the iPad 2 and iPhone 4S with iOS 5.
I wrote up the results on the wiki of the Embedded Metadata Working Group of the Visual Resources Association Data Standards Committee. The information is hard to come by in one place and might be of interest to some.
